RECIPE: Cupcakes 3 Ways

Ingredients

Vanilla Cupcakes: 110g butter 110 caster sugar 2 eggs 1/2 tsp vanilla extract 110g SR flour Coffee & Walnut Icing:  Instant coffee (3 tsp coffee, 1 tsp hot water) 100g Butter 225g Icing Sugar Walnuts (crushed) Chocolate Cookies & Cream Icing: 100g Butter 100g Icing sugar 2 tbsp Coco powder Cookies & cream biscuits (crushed) Strawberry Shortcake Icing: 100g Butter 225g Icing sugar 1/2 tsp Pink food colouring Strawberries Shortbread (crushed)  

Equipment

Hand Mixer Grind & Chop Digital Scales Cupcake Cases x 12 Piping bags x 3 Mixing bowls  

Method

Vanilla Cupcakes: 1: Preheat your oven to 180°c and weigh out ingredients on the Scales 2: Add the flour, sugar, butter and eggs into a bowl 3: Mix together using a Hand Mixer until light and fluffy 4: Stir in the vanilla essence 5: Spoon in to cupcake cases and bake for 15-20 minutes or until golden      Coffee & Walnut Icing 1: Dissolve 3 tsp instant coffee in 1 tsp boiling water and leave to one side to cool 2: Beat together 100g of softened butter and  225g of icing sugar until smooth 3: Grind walnuts using a Grind & Chop 4: Mix in the cooled coffee mixture 5: Spoon into piping bag and apply to cupcakes 6: Sprinkle over crushed walnuts      Chocolate Cookies & Cream Icing 1: Beat together 100g of softened butter, 100g of icing sugar and 2 tbsp of cocoa powder until smooth 2: Spoon into piping bag and apply to cupcakes 3: Grind biscuits using a Grind & Chop 4: Sprinkle over crushed cookies & cream biscuits      Strawberry Shortbread Icing 1: Beat together 100g of softened butter, 225g of icing sugar and food colouring until smooth 2: Spoon into piping bag and apply to cupcakes 3: Grind biscuits using a Grind & Chop 4: Sprinkle over crushed shortbread biscuits and add strawberry      And there you have it, 3 easy cupcake toppings that will go down a treat!
